Grilled Veggie Sandwich

Ingredients

sandwich bun, split

salad greens
|
|
|
| 2 |
slices |
eggplant, grilled
|
|
|
| 2 |
slices |
provolone cheese
|
|
|
|
|
Salt to taste
|
|
|
|
|
Pepper to taste
|
|
|
|
|
Mayonnaise
|
|
|
Directions:
On bottom half of bun, layer greens, eggplant and cheese; sprinkle with salt and pepper. Spread mayonnaise on top half of bun; top sandwich with bun.
